Preheat the oven at 180°C.
Grate lemon peel.
Combine the sugar, ginger, nutmeg, cinnamon, spice, baking powder and the salt, then add the butter, the honey, the milk, the vanilla and the grated lemon peel.
Stir the mixture carefully until it becomes whole then slowly add the flour.
Work the mixture with your hands and add some more flour if required or until the mixture does not stick to your hands.
Using a rolling pin, roll open the dough until its ½ cm thick and with a cookie cutter cut the cookies.
Bake for 10 minutes, then leave to cool for 5 minutes and remove with a spatula.
