Cooking the skate.
Put the water, salt to taste, white wine vinegar, bay leaf, cumin and paprika, peppercorns and a sliced onion in a pan and bring to a boil.
Add the skate and simmer gently for 25 minutes.
Making the sauce.
Prepare the sauce in the meantime.
Put the butter in a saucepan; add the onion and sweat taking care not to burn.
Add the orange juice and honey and leave it to reduce.
Then pour the brandy and flame it to reduce the alcohol.
Sprinkle the parsley and add at the end the lemon juice.
Season to taste.
Pour over the hot skate.
