1/2 kg dried broad beans
1/2 cup olive oil
1 small chili pepper
8 garlic cloves
1/4 bunch parsley
some fresh mint and marjoram
1. Soak the beans overnight, changing the water at least 3 times.
2. Boil the beans in fresh water for one and a half hours. Drain off any excess liquid and mash or liquidize the beans.
3. Add the olive oil, lemon juice, crushed chili pepper, chopped garlic, parsley, herbs and salt. Serve hot or cold as a snack on fresh bread or as a dip.
