Who are the customers of a restaurant that is located on such a touristic area? Greeks or foreigners? Locals or tourists?
The customers are a combination of all. We have locals and tourists, Greeks and foreigners. The truth however, is that the Greeks are the most demanding of them all. Foreigners are just curious and their desire is to be introduced to the Greek Cuisine. In fact, they are surprised when they realize that there is more than just gyros, pita, mousaka and tzatziki.
The restaurant is situated on the central square of Lindos. What is your opinion on the fact that the restaurant is a part of the tourist sights, at a time when gastronomy is on the rise?
It is true; the restaurant is a sight by itself. A neoclassical, well preserved, pebble paving at the entrance, domes and arbours making one feel as if they were in the Hanging Gardens of Babylon. As for Greek cuisine, it has nothing to be jealous of when it comes to other local cooking.
Has the traditional Rhodian cooking influenced your cuisine?
I always adored anything my grandmother made, all traditional delicacies. Of course, my major influence came from my father, as he was an excellent cook. Out of all traditional Rhodian recipes, I prefer the Lindos dolmadakia, sea food and Lindos goat.
Have your recognitions as a chef upgraded the restaurant at all?
Recognitions come as rewards for your effort and quality. Everything we do, we do with love. And of course these standards are met through our quality. But allow me to say please, that we are very down-to-earth people, no cavalier attitude from us… I would also like to wish Lindos, my hometown, to welcome the people she deserves.
