Phyllo pastry

Literally meaning 'leaf' pastry, a type of Middle-Eastern, Greek and Balkan pastry made from unleavened flour dough, progressively rolled and stretched into translucent, paper-thin sheets. It is usually sold ready-prepared in layers of several rectangular sheets, and is used to make savoury dishes such as cheese or spinach pie, and sweets such as baklava.
